I am going to be a sophomore in the fall, what should I do over the summer that will...?

Volunteer is great. Hospitals, libraries, all great places to volunteer at. You could also babysit a lot kinda as a job. Or even start a charity and try to raise money to donate to a cancer-treatment organization or something along those lines.
